Easter egg surprise

What I love about Easter time? The fact that it tells me spring has arrived. I am not a big fan of winter and cold weather so I am really welcoming the second season of the year. This year it is really special as our little daughter will really be part of this tradition and I cannot wait for her to search for the Easter eggs outside. Last year she was still a bit too small in order to really get what we were doing there outside.

We will spend the Easter weekend this year in Portugal together with Jochen´s family. Portugal is usually a Christmas/ New Years Eve thing but we switched this time. It is not easy to take along much on the plane but a small present had to come with us. To celebrate a bit in Portugal I tried a recipe beforehand and I loved how it turned out: Cake in an eggshell


  • 10 eggshells
  • 100g flower
  • 75g sugar (with vanilla if you like)
  • 75g butter
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 tablespoon cacao

To prepare the eggshell you have to make a whole on the bottom side with a size of about 1cm. Get the egg white and yellow out and wash them out properly. If you have a baking tray for cupcakes put the eggs with the opening on the top in there. If you have none like me simply make rings out of aluminum foil where you can put the eggs in.

Preheat the oven to 200 degrees and prepare a dough with all the ingredients apart from the cacao. Divide it in two and put one half into a icing bag. Take the cacao and mix it into the second half and do the same as with the first half. Put the dough now bit by bit dark and light one in turns into the eggshells (that way they look like a marble cake once baked) until they are a little bit more than half full. I learned it the hard way: If you make them fuller they will overflow but then simply take the bit off after baking. Put them for about 15 minutes into the oven. Check with a tooth pick if the cake is done enough. If the tooth pick is sticky it needs a few more minutes; if there is nothing to see on it the cake is done.

Put them with the opening on the bottom into a eggcup. You can believe me your guests will be more than surprised. Happy Easter out there…
